The Recipe of Mutton Satay
Ingredients
600g mutton fillet, sliced thinly
Bamboo skewers, soaked in water for several hours
Marinade
6 shallots
4 cloves garlic
1 stalk lemongrass
2 tbsp meat curry powder
2 tbsp chilli powder
1 tsp coriander powder
½ tsp cumin powder
Seasoning
2 tbsp soft brown sugar
1 tbsp salt
1 tsp pepper
1 tsp ground black pepper
2 tbsp light soy sauce
½ tsp lime juice
3-4 tbsp coconut milk
Method
Blend marinade ingredients in an electric food processor until fine then combine with seasoning ingredients. Add mutton slices to the combined marinade. Mix well and leave aside to marinate for several hours. Thread each bamboo skewer with the marinated mutton slices. Arrange the skewered meat over a barbecue pit and grill until lightly browned or cooked through. Baste constantly with a little oil when grilling. Serve immediately with any satay sauce.
